This past week's menu was full of new things and yummy things! :)
Monday was Not So Sloppy Joes! Oh so yummy! Chris took them for lunch for the next two days...he was a big fan and a good sport with the left overs! ;)
Not So Sloppy Sliders
1 1/2 lbs ground beef
1/2 onion, diced
1/2 bell pepper, diced
1 tsp yellow mustard
3 tbsp Wildtree Sloppy Joe Blend
3 tbsp tomato paste
1 tbsp brown sugar
Mix all ingredients in freezer bag. Remove air and double bag.
To Prepare: Defrost. Form meat into 12 mini patties. Grill on stove top to desired doneness. Serve on a bun with your choice of cheese!
We left out the onion and pepper and made them regular size patties, because that's the buns we had. :) Sooo good! And I am not even a traditional sloppy joe fan! ;)
Lemon Rosemary Chicken was on the menu for Wednesday! Once again...Yum! The kids really like this one. Especially the little one! He is quite the pasta lover. And we did omit the salt listed below. I typically don't add much salt to anything.
Lemon Rosemary Chicken
1 lb boneless skinless chicken cut into bite size pieces
2 tbsp Wildtree Garlic Grapeseed Oil (or any cooking oil)
1 heaping tbsp Wildtree Lemon Rosemary Blend
1/2 tsp kosher salt (use less of reg salt)
Combine all ingredients in Ziploc, double bag and freeze.
To Prepare: Boil pasta in Chicken Bouillon for 7-10 min. When pasta is cooking, saute the bag ingredients in large skillet for about 15 min, stirring frequently. Drain pasta and reserve 1/2 cup of broth. Add pasta and broth to skillet and toss to combine. Top with Parmesan cheese.
Thursday was every man for himself! ;) Ha. No really it was just left overs and corn dogs for the kids...don't judge. ;)
Friday was probably Grayson's favorite meal of the week, aside from the tacos he requested. He couldn't stop talking about this chicken!
Cheesy Chicken Tenders
1 1/2 lbs boneless, skinless chicken tenders
2 tbsp Wildtree Smoky Bacon Flavor Grapeseed oil
In a separate quart bag mix:
1 package of Wildtree Crispy Chicken Blend
3/4 cup Wildtree Kids Cheez
1 tsp Wildtree Adobo Seasoning Blend
Mix ingredients into bags and remove air. Place both bags in a freezer bag.
To Prepare: Preheat oven to 425. Lightly grease baking sheet. Place Quart bag contents in a shallow dish. In separate dish, crack 2 eggs and whisk. Dip chicken into eggs and then generously roll tenders in bread crumb mixture. Place chicken on baking sheet and bake 15-17 minutes until cooked through.
I didn't get a picture of this goodness, but it was so delicious! And the Kids Cheez mentioned above is another one of those "must haves". I love it! It can go on any kind of noodles and is sooooo much more clean than the box mac-n-cheese you buy from the store! No coloring, no yucky stuff, and taste great! It's a staple in the Powell House!
Sunday had a special treat! Only thing I wonder is why this has sat in my cabinet for so long! If we had known it tasted so yummy, it would have been gone a long time ago!! Cinnamon Rolls! And I made them. Me. The lady who can't cook and really doesn't like to! ;) They were very easy and so so good! That was our Sunday breakfast. Will definitely be getting more!!
And I would like to remind you, all of these yummy meals came right out of my freezer! One day of prep and then the meals just hang out in the freezer waiting on the day they get used, and boy do we use them. I am so in love with freezer cooking! It has changed the way we eat, for sure!!!
