What's In The Freezer Monday

This past week, I restocked the freezer! When I dug out one of the last two bags I had in there, I decided it was time! So after one afternoon and evening, it's now full! Like 30 meals full! :) Some new and some of our old favorites...meatloaf will probably forever be one of our favorites. It is so tasty, and I don't even like most meatloaf, but the Wildtree recipe is just so so wonderful! I will be sharing that later, I promise!

On the menu this week we had:

Homemade Chicken Salad
12 oz of prepared chicken
8 dill pickles, chopped
1/4 cup of mayo
1 Tbsp of lemon juice
1-1 1/2 tsp of Wildtree dill dip blend

Mix it all together and chill for an hour.

That's it! So easy and so so good!!! Chris, Grayson and I all loved it!! It was all gone that night! :)

I posted more about that here :) So good! And EVERYONE liked it. If I can find something all 5 people gobble up, then it definitely goes on our "make again" list!

Ashamed to say, we did have an "every man for himself" night this week too...I aim to decrease the frequency of those...maybe... ;) Sometimes Mama just needs a break!

Cajun Shrimp & Red Pepper Fettuccine
2 lbs. medium shrimp, peeled and deveined – UNCOOKED (We substituted chicken)
2 Tablespoons Wildtree Garlic Grapeseed Oil
1 Tablespoon Wildtree Cajun Seasoning
(or less if you don’t want it too Cajun)
1 red bell pepper finely diced

Combine all ingredients in a large Ziploc freezer bag and "smush" to combine.
To prepare: Boil and cook the fettuccine first. Heat a large skillet over medium-high heat. Empty bag into skillet and cover. Sauté for about 5-7 minutes. Uncover and stir. Add the half & half and stir, reducing heat to medium. Add the fettuccine noodles and toss to coat. Top with shaved Parmesan cheese.

This was a little spicy for our liking...I am discovering our family is not really big on "Cajun" meals. No one really enjoys them...so probably skipping over those in the future.

It was a happy Monday here! We had Daddy an extra day this weekend. (Always so nice!) Potty training is well underway with the little one, and the big kids got a weekend with their Nina! (Do to the recent changes/adjustments, it was the first time in almost a year that they have spent the night with her...they had a blast and she enjoyed it too, I think!) Hope y'all enjoyed your extra weekend day and, tomorrow, may your "Monday Tuesday" be an acceptable one! :)
